New Year’s is my favorite holiday. I don’t care about the countdown or the popping of bubbly or the need to kiss my boo right at midnight on one designated day of the year. To be quite honest, I actually didn’t even stay awake until midnight this last New Year’s Eve. I was tired by 11 o’clock, so I went to bed. #noregrets
I love New Year’s because it’s a chance for a fresh start. A time to reset. No matter what happened the 365 days before, you get a clean slate. A do-over. Put on the LB’s like you’re a freshman in college? You can still be your healthiest self on January 1st! Didn’t reach a single goal the year before? Who cares? It’s a new year! For goal getters like me, January 1st is magical.
For the same “fresh start” reason, I love starting new things at the first of the month. Whether it’s a 30-day fitness challenge or a new habit I want to pick up, I always aim to start on the first. And when the first of the month just so happens to fall on a Sunday or Monday, it’s like winning the goal-setting lottery.
But there’s no reason to wait for the start of a new month or a new week to restart your healthy eating. Every single day is a new opportunity to do better! Journaling my food every day with the Noom app has definitely helped me realize that. It doesn’t matter how I did the day before with my food choices and calorie counts. When I wake up, it’s a new day and I get a blank food journal to work with. Why not start it off on a good note?
Breakfast is my favorite meal of the day, not because I’m a morning person (I’m actually anything but!), but because I really just like breakfast foods. Eggs, bacon, cereal, pastries. Oh, pancakes?! Sign me up!
When I got serious about my health and fitness journey, I headed to Costco to fill my fridge and pantry with tasty, healthy, and easy to make options. I am not much of a cook, so chopping and cooking to start my day wasn’t going to work for me. Instead, I need breakfast to be quick and easy. After a little experimentation, I found the perfect breakfast for me and have legit been eating it daily since November.
Here is what’s on my daily healthy breakfast menu:
Three Bridges Egg Bites
If you’ve ever had the egg bites at Starbucks, these are really similar, but I actually like them even more! The Costco near me carries two different varieties – Cheese & Uncured Bacon Egg Bites and Spinach & Bell Pepper Egg White Bites. I haven’t ever tried the Spinach & Bell Pepper variety, simply because I’m not a huge bell pepper fan. But the cheese and bacon ones are my jam!
These egg bites are gluten-free and keto-friendly with 310 calories, 20 grams of protein, 3 grams of carbs, and only 1 gram of sugar. Each package has two egg bites, and those two egg bites equal one serving. When I first started eating these, I would have both egg bites for breakfast, just like I would get in a Starbucks serving. But, as I was entering all my food into the Noom app, I quickly realized that I needed to cut back a little if I was going to hit my daily caloric goals. I experimented with only eating one egg bite each morning and that totally fills me up.
Eating only half the package also brings the cost down. They come in a 4-pack, so 8 egg bites total. My last Costco trip they were $9.79 per pack, so $2.45 per serving or $1.22 per egg bite. Fun fact… two egg bites at my local Starbucks cost $4.65.
These are located in the refrigerated section at Costco, but apparently you can also find them at local grocery stores and even Target. The Three Bridges website has a location finder, which will tell you where the egg bites are sold near you. Costco isn’t listed on the site, but I’m thrilled to know if Costco stops carrying them, I can still get them other places. The website also lists other flavors that I haven’t had but would love to try, like Country Style Sausage, Chile Verde, and the Uncured Ham & Gruyere in an egg white variety.
Strawberries and Blueberries
I’ve known for a long time that berries are a great fruit option because they contain fiber, vitamin C, and antioxidants. But I honestly wasn’t making fresh fruit a part of my daily routine until recently. Every Costco trip now involves a stop in the produce section for a large container of strawberries and blueberries which I add to my daily breakfast.

Black Coffee
I used to never drink plain black coffee. I was a half-and-half and Splenda kinda girl until I did a Whole30 challenge a few years ago. With Whole30, dairy and sugar (including sugar substitutes like Splenda) are completely off limits, so I started drinking my coffee black. And since then, I haven’t gone back to my pre-Whole 30 ways! While I’ll have an occasional Starbucks (skinny vanilla latte with almond milk, please!), my daily ritual is plain black coffee. I know it’s not for everyone, but zero calories and zero sugar definitely sold me.
The Caloric Breakdown
Here’s how my healthy breakfast breaks down calorically, according to my Noom food journal:
- One Three Bridges Egg Bite = 155 calories
- 1/4 cup Fresh Blueberries = 21 calories
- 5 Fresh Strawberries = 20 calories
- 1-2 cups Black Coffee = 0 calories
- TOTAL = 196 calories
Eating the same thing every morning might seem boring to some people, but honestly… I love it. It’s one less thing I have to think about every day and one less decision I have to make. And when I start my morning on a good note, it helps set me up for success the rest of the day or helps me move past any not-so-great eating I did the night before.
